Abstract
维生素C作为人体内重要的水溶性抗氧化剂,在维持氧化还原平衡、抵御氧化应激损伤中发挥关键作用。与传统酸性抗坏血酸不同,它通过将抗坏血酸与矿物质)结合形成抗坏血酸盐,创造出pH值中性或偏碱性的稳定化合物。这种结构改造不仅解决了普通维生素C的胃肠刺激问题,更通过矿物质协同效应和提升生物利用度,实现了抗氧化效能的质的飞跃。其抗氧化作用是一个多维度、系统性的生物工程,贯穿从分子修复到组织保护,从食品保鲜到工业稳定的广阔领域。本文系统阐述了高纯碱性复合维生素C的主要成分特性及作用,深入剖析其抗氧化功效,并探讨当前研究局限与未来发展方向,为该类制剂的深入研究与应用提供理论参考。
